The Art and Science of Hospitality

With a mix of European tradition of excellent customer service and American management strength, the reputed Les Roches School of Hospitality Management of Kendall offers:

The curriculum is a mixture of the art of hospitality (service, culinary arts, design, concept development, and creativity) with the science of management (marketing, human resources, operations, technology, financial management, and strategic management). Kendall will have you ready to manage and command in any of the hospitality related sectors by focusing on the knowledge and skills needed to make big decisions in large hotel operations, world-class food service, as well as state-of-the-art meeting venues. Kendall Les Roches School of Hospitality Management graduates receive their Bachelors of Arts in Hospitality Management from Kendall College.

Valuable experience is earned through real-life exercises and computer simulations that immerse you into the aesthetics. Through these you will gain experience in the operational elements of the hospitality industry, culture and customer focus of hospitality, and develop your poise and confidence through individual accomplishment and teamwork. This will then provide you with the skills knowledge and detail orientation to manage future employees who will put these skills to use on a daily basis, and to let you understand more fully the quality of working life issues your future employees will bring up.

You will discover the basics of culinary arts, food and beverage service, purchasing, receiving and storing, reception, housekeeping, and engineering in the Colleges state-of-the-art kitchens, award-winning dining room open to the public, computer facilities and unique Hyatt Hotel Suite, using the recently renovated Riverworks campus as your living laboratory. You will develop critical appraisal and decision-making abilities required for the future manager, as all of this is going on.

Our hospitality management program is totally focused towards educating the future manager. This is geared to the hospitality industry, and will you be entering a comprehensive management curriculum. You will have courses available to you in rooms, food and beverage management, hospitality marketing, hospitality human resources management, and hospitality accounting, as well as financial management as it pertains to practicality, real estate, and multi-unit systems. Our capstone activity is a management cycle which strategically utilizes hospitality cases and simulations.

Program-Specific General Education

In addition to Kendalls core general education requirements and general education electives, a variety of general education courses with suggestions for hospitality, augment the program. Students are able to develop skills in a foreign language, which enables them to gain knowledge of environmental issues with impact on hospitality development. They will also acquire a familiarity with the fine arts, trends in latest design, acquisition of statistical modeling tools, and also acquire acquaintance with micro- and macroeconomic factors affecting business environment.

Concentrations

Courses on Concentrations permit students to gain expertise in one of the business segments related to the hospitality industry by obtaining an in-depth knowledge that is complementary to the program's general depth. Advanced courses that the student can take include Hotel Management, Food and Beverage Management, and Meetings and Convention Management.

Concentration in Hotel Management

With more than 45,000 hotels in 175 markets, varying from small bed and breakfast establishments to massive convention and casino hotels, the hotel industries in the U.S. and worldwide are seeing remarkable growth. Currently the demand for managerial candidates far outweighs the supply of qualified persons to fill the positions. Kendall College enables you to learn general management with a special focus on rooms management and with this great concentration.

Concentration in Convention and Meeting Management

Of the many segments of the hospitality industry, and one of the fastest growing, is convention and meeting planning. Associations expend more than US$54 billion yearly to hold approximately 215,000 meetings, ranging from city wide conventions to seminars. Having both Navy Pier and McCormick Place, Chicago is the biggest trade show and convention location in the world. With this concentration, Kendel's student preparation is focused on management of conventions and visitors bureaus, event planning companies, and special events.

Concentration in Food and Beverage Management

The biggest and most varying segment of the hospitality industry lies in food and beverage management food service. Both commercial and noncommercial food service operations, which provide food and beverage in places like restaurants, hotels, casinos and national parks, are growing at an average rate of 7.6% per year. At Kendall, you can train to take desirable management jobs in catering, institutional food service, and restaurants.
